We were enlisted by the senior leadership team of The Langdale Hotel & Spa in Ambleside, Lake District, to conduct a thorough review and recommendation report on their Food and Beverage (F&B) proposition and operational execution across the estate. Our primary goal was to craft an F&B strategy document aimed at enhancing offerings across all day parts, target demographics, and operational processes. 

With approval from the executive board, our focus shifted to revitalising the flagship Stove Restaurant & Bar. We developed a new menu suite, implemented a new brand proposition for front of house and kitchen staff, and conducted an intensive training program. Following a successful menu launch, we continue to provide ongoing support to uphold the new standards. Future F&B projects within the estate are slated for 2024.

Our Process

  • Creation of an F&B strategy document and segmentation analysis of F&B offering throughout the estate

    • Operational Audit and Review recommendation report

    • Support in creating recruitment briefs, job descriptions and team structure

    • End to end menu development, training and implementation

    • Front-of-House and Back-of-House staff training

    • Implementation of new kitchen set up, layout and operational processes

  • Creation of Brand Hospitality Manual and key operational documentation

    • Creation and management of project critical path and launch

    • Advise and support on potential new EPOS stock control management systems

    • Project management of new crockery and glassware to support restaurant relaunch

    • On site launch and Go Live support

    • Food health and safety training and management of third party auditor
